Wow Maren, a lunch post?!
Yep, what can I say? I’m working from home today so I could simultaneously get some laundry done for my trip to Paradise, Ca this weekend for the Frost to Fog 5k in Chico. We’re leaving tomorrow night right after my Dad’s birthday dinner. Super excited!!
Snack
I munched 5 of these Nut Clusters mid morning. I’m obsessed with them. They’re so good and really filling for such a little bite. I’m contemplating driving like a mad woman at 84mph back to the Grocery Outlet to buy their entire stock.
All morning I researched municipal codes for our area to figure out if the food truck we want to buy for Uncle Skinny’s will work. It’s tough reading the code. I have to read each piece of code 7 and a half times before I really understand what it’s saying.
Lunch
I’ve been craving these ramen type Thai noodles all week! I finally broke down and made ‘em.
I also made some roasted asparagus so my lunch had some health factor. Here’s the recipe, you can also find it later on my Recipe Page!
Roasted Asparagus
Prep Time: 5 minutes
Cook Time: 20-30 minutes

Ingredients
- asparagus, cleaned and dried
- evoo
- salt
- pepper
Instructions
Preheat the oven to 425 degrees.
Lay cleaned asparagus shoots on a baking sheet lined with foil.
Drizzle with evoo then roll asparagus so that all sides are covered. Sprinkle with salt and pepper.
Cook for 20-30 minutes until slightly browned, shriveled and they are sizzling.
Holy Cannoli these were good. I could have made another 2 servings and eaten them all!
There is nothing special about these noodles. Basic, instant noodles that I added yellow curry powder and cayenne pepper to. But I wanted them and so I had them. Now I can move on.
I still haven’t done any pilates, but I did stretch and use the Stick (tiger tail) to roll out my legs which really helped. Maybe after an afternoon of folding laundry I’ll get those 3 miles in after all.

I’m diggin the noodles. And now I’m wanting May to come sooner so I have delicious, local asparagus to roast. And I’m jealous of you working from home!
May? Is that the normal time for asparagus?!?! I don’t work from home too much because I’m never as productive as at work but it’s nice for when I need some quiet. Reading municipal codes needs complete silence with no distractions.
I don’t know how it is for you in Sunny California, but here in Ontario, we only have a 4-8 week window (depending on the year/weather) in the spring for asparagus, so I binge on it then (I think bingeing is ok when it’s something green and healthy like asparagus).
Bingeing on veggies is 150% okay!
I’m SO glad you gave into the noodles! It’s funny, but one of the things I crave (but cannot have bc of the gluten content) is basic hot & spicy instant noodles!
They are my weakness. The ones I have are rice noodles so they are gluten free (well maybe not for celiacs… I think they are processed in a wheat facility). Such a bummer.

I found them at the Grocery Outlet, but I’ve seen them in the regular grocery store too. Try in the granola bar section and the salad dressing/crouton areas. Good luck!
Oooh the noodles look awesome. That takes me back to college (except I’m sure your version is healthier!) They just look so comforting. And of course, the asparagus looks good too- as do the but clusters. I’ve had something similar and they ARE great. Good pre-workout fuel!

I’m envious of work from home days. Noodle lunches sound so much better at home than in the microwave at work. And I love those granola bites too! They’re seriously addicting.
Asparagus is one of the vegetables I never really think of eating, but I do like. I’m totally in a broccoli rut. Maybe I could win Kevin over to the vegetable side with this recipe!
